2/3 cups of milk
2 tsp (10mL) of oil plus extra for cooking
Add 1 mashed banana instead of an egg (it also adds more flavour!)
Mix... eggs or mashed banana, oil and milk in a bowl.
Mix in the dry pancake mix. Add more milk if you prefer a thinner pancake.
Heat... a frying pan on high with a little oil or butter.
When hot, drop the heat to medium and add ¼ cup of batter for each pancake.
Add blueberries or raspberries for deliciously thick pancakes.
Cook... until small bubbles start to form and pop on the surface and then flip.
Cook for about 2-3 minutes on each side.
Serve... with your favourite toppings.
