Vegan Chocolate Doughnuts

Dry ingredients:

1 cup GF flour 

1/2 cup coconut sugar

1/4 cup cocoa powder

1 tsp baking powder 

Wet ingredients: 

1 cup Mt Elephant Chocolate Hemp & Oat Mylk 

1 tsp vanilla essence

3 tbsp melted vegan butter 

Topping: 

1/2 cup vegan choc 

2 tbsp coconut oil 

1/4 cup chopped hazelnuts 

 

Method: 

  1. Preheat the oven to 180 degrees celsius and grease doughnut moulds
  2. Set aside
  3. In a large bowl, whisk together all dry ingredients ensuring there are no lumps (depending on your cocoa powder, you may need to sift it into the mixture) 
  4. Then add in the wet ingredients, mixing until it forms a thick consistency 
  5. Add the mixture into the doughnut moulds only about 75% of the way to allow for rising of the mixture (I pipe the mixture into the moulds, it's a lot easier!) 
  6. Bake for 15-20mins or until baked all the way through
  7. Cool the doughnuts for 10 minutes. While the doughnuts are cooling, melt together the chocolate and coconut oil
  8. Once the doughnuts have cooled, dip them in the chocolate and add the hazelnuts on top
  9. Set for a further 5 minutes and enjoy!
