Summer Wraps

Scratching your head trying to figure out what to make the kids for lunch tomorrow? Luckily, the amazing @veganonthegc is at it again with these Delicious Summer Wraps Using our Hemp & Olive Oil Blend to create the ultimate lunchtime snack

Ingredients:

2 wraps

8-10 small cauliflower florets

3 Tbs plain flour

1/3 cup plant milk

1 tsp miso

1 cup panko bread crumbs

Hemp Seed & olive oil blend

2 Tbs miso paste

4 Tbs peanut butter

1 Tbs Apple cider vinegar

2 Tbs maple syrup

1 tsp minced ginger

1 tsp garam masala

1 tsp garlic powder

1 can chickpeas drained & rinsed

1/4 red onion finely diced

1/2 avocado, mashed

 Lettuce leaves

2 tsp Dukkah

Sweet chilli sauce

Method

  1.  Preheat oven to 180’C. Line a baking tray

  2. In a small dish, mix the flour, 1 tsp miso & plant milk into a light batter. Dip the florets into the batter to coat, then roll in Panko crumbs. Place on the baking tray, drizzle with Hemp & olive oil blend, bake until golden

  3. In a small bowl mix the spices, ginger, garam masala garlic powder, peanut butter, vinegar & maple syrup. Add a little oil if needed to form a smooth paste.

  4. Mash the chickpeas and stir through the spiced miso paste, onion & coriander.

  5. Spread avocado onto the wrap, top with spiced miso chickpea salad, lettuce leaves & crumbed cauliflower. Roll the wrap & use 4 toothpicks to hold in place, cut into four even serves. Plate & drizzle with sweet chilli!
