Ingredients: A bunch of basil
1/2 lemon juiced
2 cloves garlic
2 tbsp hemp seed oil
3 tbsp hemp seeds
100g sun dried tomato
3 cubes goats cheese
Extra hemp seeds, chilli, salt and pepper to top
1. Cut up pumpkin and broccoli and roast in oven (if short on time you can cook it in the microwave). Allow to cool.
2. Cook pasta as per instructions, drain and cool.
3. While cooking pasta, blend pesto ingredients together in a high-powered blender. You might need to add a dash of water if needed.
4. Once all ingredients have cooled down, combine pumpkin, broccoli, tomato, pasta, pesto, goats cheese in a bowl. Top with hemp seeds, chilli, salt, and pepper to serve.
