Hemp & Citrus Muffins

A classic recipe that will satisfy all cravings. These Hemp and Citrus Muffins are fluffy, tasty and irresistible!

Recipe makes 16 muffins.

3 cups all-purpose flour
1 cup sugar
3 tbsp Hemp Seeds
2 tbsp Hemp Flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups greek yogurt
2 tbsp lemon juice
2 tbsp orange juice
1 tbsp grated lemon zest
1 tbsp grated orange zest
2 large eggs
200g unsalted butter, melted and cooled

Turn on the oven and set to 160 degrees and prepare a muffin tin with 16 paper muffin cups.

Combine all dry ingredients into a bowl (flour, sugar, hemp seeds, hemp balance, baking powder, baking soda, and salt) and stir.

In a separate bowl, whisk all wet ingredients together (yoghurt, lemon juice, orange juice, zest, eggs and butter) until smooth and creamy.

Fold dry ingredients into wet and stir to combine. Using a spoon, place a heaped scoop into each paper muffin cup and put the tray into the oven for 20 minutes or until brown.
