Green Hemp Pizza

Green Hemp Pizza

Makes 1 large pizza or 2 small.

Pizza Base:
2 3/4 cup spelt flour (plus more for kneading)
1/2 cup Hemp Protein
1 tsp salt
1 1/4 tsp (7g) instant dry yeast
2 tsp brown or coconut sugar
1 tbsp Hemp Seed Oil
1 cup (250ml) lukewarm water

Hemp Seed Pesto:

1 packed cup fresh basil
1 packed cup fresh spinach
1/2 cup Hemp Seeds
3 tbsp Hemp Seed Oil
2 tbsp lemon juice
2 garlic cloves
3 tbsp nutritional yeast
Pinch of salt and pepper

Add the water, dry yeast and sugar to a large bowl and rest for 5 minutes. Mix in the hemp seed oil and then sift over the spelt flour, hemp protein and salt. Combine until it forms a ball, it will be slightly sticky. Turn the dough out onto a lightly floured surface and knead the dough for 5 minutes. Lightly grease a large bowl with oil and place the dough in the bowl. Cover with a tea towel and allow it to rise for 30 minutes (or an hour if you have time).

In the meantime, add the pesto ingredients to a blender or food processor and blend until smooth. Once the dough has grown in size, preheat the oven to 200°c. Punch the dough to release any air and turn it over onto a lightly floured surface. Flour your hands and a rolling pin and roll the dough into a circle, then place on a baking sheet or pizza pan.

Spread the pesto onto the base, plus sprinkle with vegan cheese and add your favourite toppings. Place in the oven for 15 minutes until golden and the cheese has melted. Slice and enjoy with fresh basil on top.
