Fried Egg Soba Noodles

This recipe is the ultimate at home lunch treat! Created by the talented @verdureventure

Ingredients:

Soda Noodles

1 Head of Broccoli

200g Mushrooms

Handful of Snow Peas

1 Bunch of bok choy

Quarter head of cauliflower

Egg (optional)

Tofu

Flour to coat

Pinch of salt and pepper 

 

Sauce:

1/2 Tbsp tahini

3 Tbsp soy sauce

1 Tsp minced garlic

1 Tsp minced ginger

1 Tsp sesame oil

1 Tsp coconut sugar

Squeeze of lemon or lime

2 Tbsp hot water to help mix

Method:

  1. Cook soba noodles according to instructions
  2. While noodles cook, pan fry chopped veg. I used broccoli, mushrooms, snow peas, bok choy and cauliflower
  3. When noodles are cooked, drain and set aside. When veg becomes tender set aside
  4. Prepare tofu by pressing out moisture, crumbling into a bowl, covering with corn flour, salt and pepper then air fry until crispy.
  5. Place cooked egg (optional), veggies, soba noodles and sauce in the pan and toss together until everything is coated and combined.
  6. Top with crispy tofu as well as chopped spring onion, coriander, sriracha and the new Umami Sprinkle
