Fried Egg Soba Noodles
This recipe is the ultimate at home lunch treat! Created by the talented @verdureventure
Ingredients:
Soda Noodles
1 Head of Broccoli
200g Mushrooms
Handful of Snow Peas
1 Bunch of bok choy
Quarter head of cauliflower
Egg (optional)
Tofu
Flour to coat
Pinch of salt and pepper
Sauce:
1/2 Tbsp tahini
3 Tbsp soy sauce
1 Tsp minced garlic
1 Tsp minced ginger
1 Tsp sesame oil
1 Tsp coconut sugar
Squeeze of lemon or lime
2 Tbsp hot water to help mix
Method:
- Cook soba noodles according to instructions
- While noodles cook, pan fry chopped veg. I used broccoli, mushrooms, snow peas, bok choy and cauliflower
- When noodles are cooked, drain and set aside. When veg becomes tender set aside
- Prepare tofu by pressing out moisture, crumbling into a bowl, covering with corn flour, salt and pepper then air fry until crispy.
- Place cooked egg (optional), veggies, soba noodles and sauce in the pan and toss together until everything is coated and combined.
- Top with crispy tofu as well as chopped spring onion, coriander, sriracha and the new Umami Sprinkle
