Chocolate Chip Zucchini Blondie Bars

These bars were made with the talented Chloe from @cmdcreations . Made with only a few ingredients these slices are are simple, nourishing and delicious! Taking only 30 minutes to make and enriched with superfoods like maca and lucuma, this is sweet treat is completely guilt free.

Ingredients:

1 x pack Vanilla Pancake Mix

1 grated zucchini - roughly 1 cup

1 egg, lightly beaten 

3/4 cup milk of choice

2 tbsp coconut sugar 

1-2 tbsp maple syrup 

1 tsp apple cider vinegar 

2 tsp olive oil 

Chocolate chips of your choice 

Method:

1. Place all ingredients into a bowl

2. Mix until fully combined

3. Place into a lined 8x8 tin and bake for 20-25 minutes at 160 degrees celsius

4. Once golden, remove from oven and allow to cool 

5. Enjoy!
