Choc Mint Hemp Cups

(8-10 cups)



Chocolate bottom

200g melted vegan chocolate

1 tbsp coconut oil


Hemp Mint Layer:

3/4 cup soaked natural cashews

1/3 cup coconut cream

1/4 cup hemp seeds

2 tbsp hemp seed oil

1/4 tsp peppermint extract

1/2 cup stevia

1/2 tsp spirulina (for the colour)


Chocolate Top:

200g melted vegan chocolate

1 tbsp coconut oil



  1. Soak cashews in boiling water for 10-20 minutes.
  2. Melt chocolate and coconut oil together and place evenly into a silicone cupcake tray.
  3. Place into fridge to set.
  4. Prepare the Hemp Mint layer by combining all of the ingredients into a food processor. Blend for 3-4 minutes.
  5. Place middle layer evenly onto the chocolate layer and freezer for 30 minutes.
  6. Prepare the chocolate top layer (the same as the bottom layer) and place on top of the middle layer.
  7. Freeze overnight and enjoy.
